Smoked fish is recognized as a national product of Poland and is now under the protection of the government Such measures were taken in order to preserve the traditional ancient recipes for making famous and so beloved by many delicacies.
The culinary heritage of the country had to be actively protected in connection with the EU ban on the use in the industrial production of smoking on wood. Now, wood smoke treated products are considered hazardous to health in the whole of Europe, and enterprises that practice this treatment will have to conduct additional studies of their products and make out a lot of documents proving that it does not contain hazardous substances.
Most of all It's Poland that suffers the new decision, because traditional for it smoked products are produced by many local enterprises. Now they face bankruptcy, since their products are banned for mass production from September 1, 2014.
Nevertheless, the EU is considering options for easing for Polish factories, because smoking on wood is used in this country for for several centuries and is part of the traditional culture of Poland. In the meantime, the introduction of traditional Polish products into the official list makes it possible to save the oldest producers of smoked products and the old recipes used by them as part of the program to preserve the country's cultural traditions
